INTERNATIONAL WOMEN’S DAY AFTERNOON TEA AT THE COURTYARD

Hailing from Recoaro Terme – a small town and commune in Veneto, Italy, new Executive Pastry Chef Enrico Pezzelato, pays tribute to his hometown with a yellow-themed, Mimosa-inspired Afternoon Tea Set specially commissioned for International Women’s Day. In Italy, the mimosa is the harbinger of spring, blossoming before any other flower in the early days of March. It is also the choice of gift for gentlemen to present to the women in their lives on International Women’s Day.

The themed Afternoon Tea Set comprises seven savouries and eight sweets, each tinged with characteristic sunny hues. Tapping on all-natural ingredients such as carrots, saffron, corn and oranges, Chef Pezzelato eschews the use of any artificial colourings or flavours.

Composed into petite bites, the savoury selection includes Smoked Duck with Roasted Yellow Capsicum and Orange on Saffron Roll; Roasted Butternut Squash and Yellow Ricotta on Tomato Bread; Saffron Salmon Rillettes and Avruga Caviar; and Herbed Brie with Apricot Chutney on Hazelnut Crackers.

On the sweets front, Mango Profiteroles are a delightful combination of mango pastry cream and airy choux puffs, while Vanilla White Chocolate Cremeux sits on a crunchy Sablé Breton (shortbread) Crust. Freshly baked scones, a quintessential afternoon tea treat, are served warm to the table with clotted cream and berry jam.

The three-tiered Afternoon Tea Set is priced at S$48*, inclusive of free-flowing tea and coffee. A special beverage, Mimosa (sparkling wine), created specially for the occasion, is available at an additional S$20*. For each tea set sold, The Fullerton Hotel Singapore will make a donation of S$5 to SCWO Service Fund in support of marginalised women. The first 200 patrons will receive a limited edition pack of postcards printed with paintings of residents from Star Shelter (a temporary refuge for women and children who are survivors of domestic violence). Harking back to The Fullerton Hotel Singapore’s history as the General Post Office, guests are welcomed to pen a special note and post the postcard through our red postal pillar boxes to encourage a fellow female friend or to thank an inspiring female figure.
