The Clifford Pier
01 August 2016 - 31 August 2016
As an ode to the Pier's historical landing point for Singapore's forefathers, the distinctive setting of Clifford Pier is the backdrop for diners to experience the authentic flavours of Peranakan cuisine. Guest Chef Philip Chia makes his debut at The Clifford Pier with eight Peranakan classic dishes such as Babi Pongtay (Braised Pork cooked with Shiitake Mushrooms, Bamboo Shoot and Potatoes), Ayam Buah Keluak (Chicken braised with Indonesian Nut cooked in rich aromatic spices) and Ikan Kuah Ladah (Fish prepared in thin Tamarind and Pepper Sauce). The Ayam Pedas Siam (Chicken prepared with Lemongrass and Spicy Rempah) is a dish that is close to Chef Chia’s heart as it is based on a recipe inherited from his late great-grandmother.
Available for lunch and dinner, the dishes are priced from S$18* to S$26* each.
